Sticky rice’s best friend

Recipe

  • 3 carrots, peeled and shredded
  • 1 tomato, chopped
  • 2 garlic cloves, finely chopped
  • 2 Thai chiles, thinly sliced
  • 1 Tbsp peanut butter
  • 1 Tbsp fish sauce
  • 1 Tbsp lime juice
  • 1 tsp sugar

  1. Using a large mortar and pestle, lightly mash the shredded carrots to tenderize slightly, working in batches if necessary. Transfer to a large bowl.
  2. Using the same mortar and pestle, mash the tomato, garlic, chiles, peanut butter, fish sauce, lime juice, and sugar into a chunky paste.
  3. Add the tomato mixture to the shredded carrots and toss to thoroughly combine. Season with more fish sauce and lime juice, to taste. Serve with sticky rice.
