Sticky rice’s best friend ❤
Recipe
- 3 carrots, peeled and shredded
- 1 tomato, chopped
- 2 garlic cloves, finely chopped
- 2 Thai chiles, thinly sliced
- 1 Tbsp peanut butter
- 1 Tbsp fish sauce
- 1 Tbsp lime juice
- 1 tsp sugar
- Using a large mortar and pestle, lightly mash the shredded carrots to tenderize slightly, working in batches if necessary. Transfer to a large bowl.
- Using the same mortar and pestle, mash the tomato, garlic, chiles, peanut butter, fish sauce, lime juice, and sugar into a chunky paste.
- Add the tomato mixture to the shredded carrots and toss to thoroughly combine. Season with more fish sauce and lime juice, to taste. Serve with sticky rice.
