This is my take on my favorite dish at Din Tai Fung!
Recipe
Wontons
- 1/2 lb ground pork
- 5 shrimp, peeled & deveined, chopped
- 4 green onions, thinly sliced, divided
- 1 Tbsp oyster sauce
- 1/2 tsp white pepper
- Wonton wrappers
Sauce
- 2 Tbsp vegetable oil
- 1 large shallot or 1/2 onion, grated
- 1 2-inch piece of ginger, grated
- 2 garlic gloves, grated
- 4 Tbsp brown sugar
- 3 Tbsp rice vinegar
- 2 Tbsp soy sauce
- 2 Tbsp water
- 1-2 tsp chili flakes
To make the wontons…
- Combine pork, shrimp, half of green onions, oyster sauce, and white pepper in a medium bowl. Mix until just combined.
- Working one at a time, place a small scoop of the filling onto the center of the wonton wrapper. Wet the edges of the wrapper and fold in half to seal. Bring the two corners together and press one on top of the other, wetting the interface between the two corners to get them to stick.
- Boil wontons for about 5 minutes, then drain. Serve with spicy sauce and remaining green onions.
To make the sauce…
- Heat oil in a medium saucepan over medium heat. Add grated shallot, ginger, and garlic to the pan and cook, stirring occasionally, until softened, about 5 minutes.
- Add brown sugar, vinegar, soy sauce, water, and chili flakes, and simmer for about 5 minutes, stirring occasionally.
- Remove from heat and serve topped with wontons and green onions.
