Look for fried garlic at your local Asian grocery store. It’s my new favorite topping 🙂
Recipe
- 2 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 1 Tbsp mirin
- 1 tsp sugar
- 1/2 tsp chile flakes
- 1 carrot, shredded
- 1 Tbsp chopped chives
- 4 Chinese sausages, cut on the diagonal into 1-inch pieces
- 2 Tbsp canola oil, divided
- 4 eggs
- 1 tsp fish sauce
- fried garlic, for serving
- Handmade Noodles (or store-bought noodles)
- Heat 1 Tbsp oil in a skillet over medium heat. Cook the sausage pieces, turning occasionally, until cooked through, 5-6 minutes. Remove to a plate with paper towels.
- Combine the eggs and fish sauce in a small bowl, and beat to combine. Pour the egg mixture into the skillet and cook until set, then gently remove the egg sheet to a large cutting board. Let cool slightly, then slice the egg into strips. Set aside.
- Add 1 Tbsp oil to the skillet, then add the noodles and toss, cooking in the oil for about 1 minute.
- Add soy sauce, oyster sauce, mirin, sugar, and chile flakes to the skillet, and toss to coat the noodles in the sauce. Cook the noodles in the sauce, tossing frequently, for about 1 minute.
- Add the carrots and chives, and cook for 1-2 minutes, tossing frequently.
- Return the sausage to the skillet, and toss to combine.
- Serve noodles topped with sliced eggs and fried garlic.
